Another great recipe to experiment with- vanilla, chocolate and lemon are a few base filling flavors most common. Aside from the filling there are many different types of crust- no crust, chocolate, graham cracker (the keto version) pumpkin spice and many more.

KETO OREO CHEESECAKE

Keto oreo cheesecake was kind of the inspiration behind this recipe. I ordered a piece of gluten free, sugar free oreo cheesecake from a restaurant and it was amazing. I could not believe how much the crust tasted like Oreos, it almost made me question if it was really ok for me to eat.

We have seen many keto oreo cheesecake recipes all over the internet and… just have yet to find one that actually tastes like oreo. Rather than continue testing to try and make our crust taste like oreos, we just decided to make our own version that no one would expect to taste one way and then it doesn’t. Because we know how much readers hate that.

MAKING OUR EASY LOW CARB CHEESECAKE

A tart pan or spring form can be used. Makes 3 tarts or 1 8″ cheesecake

Crust Ingredients

  • 1 1/4c almond flour
  • 1/4 c unsweetened Hershey’s Special Dark Cocoa Powder
  • 1 tbsp Lakanto Monkfruit Sweetener (promo code below) (or sweetener of your choice)
  • 3 tbsp butter, melted
  • Pinch of Salt
  • 1/2 tsp instant coffee or espresso powder (optional)

Filling Ingredients

  • 1 packet sugar free vanilla pudding
  • 1 block cream cheese, softened
  • 1 cup room temperature unsweetened almond milk

Instructions

  1. Preheat oven to 350
  2. In a medium bowl, combine all crust ingredients, mix well.
  3. Press mixture into tart or spring form pan
  4. Bake for 10 minutes in fully preheated oven.
  5. In a separate bowl- beat cream cheese with electric mixer until smooth
  6. Add vanilla pudding packet
  7. Slowly add milk while beating with electric mixer until fully combined and smooth.
  8. Pour into pre-baked crust, level and refrigerate for at least 3 hours. Best if left overnight.
  9. Cut and serve!

An easy, semi- homemade, no bake (these crust gets par baked) keto cookies & cream cheesecake.

NOTES

It is important to make sure your cream cheese is SOFTENED. If it is not soft enough you will get chunky pieces that won’t break down.

SLOWLY add the milk while electric mixing or it will splash all over.
